Everywhere Elderflower
Elderflower comes into bloom with the first burst of summer. There’s plenty of elder everywhere. Enough to satiate a city. I plucked a few dozen heads to turn to wine. The flowerheads when just open and white have a very yeast rich pollen, which starts to ferment spontaneously when mixed with sugar (or honey) water. These were collected from near the university grounds, somewhere between Plato lane and the Road to Science if I recall correctly… have marked it on Urban Edibles (a food source mapping guide set up by Fo.am lab. The ones in the former soft drink bottles fizz up the most.
