Shepherd’s purse root soda
Following a recipe for ginger root starter culture, I experimented with Shepard’s purse instead of using ginger (as in ginger beer) — shepard’s purse root which, with it’s gentle spicy tang, resembles ginger. Lo and behold the recipe worked. After a few days of adding a tablespoon of Geuzenveld honey everyday to the coarsely chopped Shepard’s purse root and water, frequently shaking the mixture all the while keeping the batch in a dark corner of the kitchen (covered with foil), the fermentation started to rev. After one week I used a portion of the starter culture to inoculate a batch of honey water for a (non-alcoholic) soda beverage.
